Thomas Siarkos
Thomas has worked in award winning first class dining rooms in Toronto such as Le Mascaron – Fingers – The Sutton Place Hotel, Harbour Castle Hilton King Edward Hotel, The Royal York and others since 1976, when he arrived in Toronto from his native country of Greece to pursue his dream of becoming an architect.
He moved to Regina in 1981 to manage the then world famous L’Habitant where he stayed until 1985. He later worked at the Diplomat Steak House from 1985 – 1989.
He has tremendous experience in fine dining and a great knowledge of French and protocol service.
He has served such dignetaries as Queen Elizabeth II and Prince Phillip, Prince Edward, Former President of France Francois Mitterand, The Royal Princess Anne, John Chretien, Paul Martin, Barbara Mcdougall, John Turner, and many other Heads of State. He has also personally served Sophia Loren, Lee Major, Tatum O’Neil, Richard Burton, Jack Palance, Richard Chamberlain, Tom Jones and many many others.
His knowledge in the restaurant industry goes back to his native land Greece where we worked since he was a little boy for his father’s restaurant. He brings a wealth of experience to this business, and it is his friendly approach to his clients along with his ever present jokes, that has made him one of the premier restaurateurs in the province of Saskatchewan.
He takes great pride in his establishment, and makes sure that each one of his clients are extremely well looked after for their entire visit.
He has also played a very important role in fundraising events in our city. He is the co-creator as well as the chairman for 12 of 15 years for the biggest fundraising event in the city, The Evening in Greece, which has raised over 1.3 Million dollars for various causes such as the neonatal and dialysis units at Regina General Hospital, Palliative Care Inc. at the Pasqua Hospital, the Hospitals of Regina Foundation in support of the new Pediatric Intensive Care unit and many others. The restaurant has offered thousands of free meals and gift certificates for events such as Diabetes Association, Cancer Society, Hospitals, Golf Tournaments and different organizations to raise funds for their various causes. Needless to say he has helped his own community, “The Saint Paul’s Greek Orthodox Community”, in a lot of different ways.
Although his passion is soccer, he loves our Saskatchewan Rough Riders. It is for this reason the restaurant has been a sponsor of the Riders for 2007 & 2008.
